The Rebuilt

It took some time and a lot of hard work but we were able to rebuild after the fire. After the insurance money came in and everyone pitch in in five short months, we were back in action.

However that time in between was trying for all of us. My family, my employees, my customers, heck myself. For some time it almost seem as if, we would not make it. There was more than one night in which I thought, this is it, and there is no coming back from this.

Lucky for me, I had the full support of my family and friends. They rallied behind me and supported me through this. Staying up late at night and early in the morning. Working and helping the construction crew rebuild my baby. Blood, sweat, and tears were spilled.

Everyone pitched in to bring my beautiful restraint back to life. It was gruesome, stressful, and long but we were able to do it.

If you ask me, it looks better than ever. I mean with the insurance money were able to upgrade a few appliances. Not to mention the new brick over we were able to score. Of Couse, I could only afford it used but it is well worth the money.

The brick oven has turn my tostadas, tortilla shells, and enchiladas into a brand new experience.

Literally, it was one of those things my Tia would say, a blessing in disguise. Of course, it was an unscheduled hardship, but I believe that we are stronger for it.

How we were almost shut down

After my first day as an official restaurateur, it was hard to get it going. Serving delicious customize burritos that was a big hit, we almost bottom out. That first week it was amazing, we made money hand over fist.

Thankfully, the food truck had established a long and loyal following of excited fans of our food. Which carry us through the first week or so, really well actually. After our grand opening, I just knew that my abuelita recipes were muy Bueno!

As the money started rolling in, folks leave full and happy the worst thing that could happen did. We were in the height of our grand opening week, everything look promising. Then I received a call from the local fire department.

It was late at night or I guess you could say early in the morning. When I got the call. I was in bed with my wife. The restaurant was booked solid; we were hoofing it all day. Such an amazing day. That night I went to sleep with a smile on my face.

I was so happy and excited that it was doing so well. For years, I put off opening one scared of failing miserably and putting my family in ruins. After some careful planning and financial frugality, we were able to open.

When I got that call, I was devastated.

There was a fire. Apparently sometime after we had closed an electric fire started. It burned the entire kitchen and caused smoke damage. I thought we would never come back from that.

The Beginning

My wife, Maria, is making me write this blog about our restaurant. Saying that it is what all the big restaurateurs are doing. That if I want to remain current and popular with the masses, I must, wait scratch that, I will write a blog about the food and happenings in the restaurant.

So here, I am typing away, trying to think of the best thing to say. Just something to say that will make people become interested in what we are cooking. Let us see, there have to be something.

I guess, let us start at the beginning.

Before I started my restaurant, I had a food truck. In which I served burritos, chips, salsa, guacamole, beans and rice, and chimichangas. After two years, I had saved enough to open a restaurant. In addition, the first thing I ever cooked at the restaurant. Aw, I remember it like it was yesterday. The first dish I ever cooked, to serve to my beloved customers, was a fully loaded we burrito. I made it so that the customers could make their own by customizing the ingredients to their pallet. For nine, ninety-nine you can get a two-pound burrito, with whatever you want, along with a side of chips and salsa. For a dollar, fifty you can add one of our fountain beverages.

This was such a big hit, everyone loved it, that it became a staple on our menu. Even as our menu has changed and altered, we have added so much more to our choices.
